Hank ready for our Philly Last Supper BBQ from Phoebes, the ‘cue was meh..,though the mac & cheese was awesome

The move was as good as a move could be, no pulled muscles, tears, minimal yelling, no puking cats, nothing of consequence was broken or lost…we did however destroy our couch and throw out all our garbage cans in a fit of pique, so we have some serious shopping to do.

I will say that my Brother is an amazing human being , an excellent travelling companion, and even though he wants me to mountain bike & kayak and made me watch cartoons, I so appreciated his help and actually I really appreciate him.

Cats survived the trip!

The electric stove is taking some getting used to, so far have set the fire alarm off twice, but we’re back on track with Menu planning, budgeting is going to be another thing, without Fresh Direct I have to be m0re careful, but  it’ll work itself out.

Monday Night

Baked 4 dozen COOKIES for Husbands first day at work: Chocolate Chip & Jamoca Almond Chip- (recipe below)

Pico De Gallo + Guacamole  w Sesame Blues

Pan-seared Chicken  for Soft Tacos- Marinated garlic, cilantro, gochuchang, vinegar

Zucchini, Onions & Red Pepper

Black Beans- green chilies, splash of Megan’s homemade pickle juice, onion, garlic

Lobsters !!!!

First Day Chocolate Chip Cookies –

1/4 Cup Ground Oatmeal

1 Tsp Baking Soda

1 Tsp Salt

1 Tsp Cinnamon

2 Cups flour

2 Sticks Unsalted Butter- Softened

2/3 Cup White Sugar

1 Cup (packed) Dark Brown Sugar

2 Eggs

1 Tablespoon Miso

1 Tablespoon Vanilla Extract

1 Cup Dark Chocolate Chips

1 Cup Semi-Sweet Chocolate Chips

(For Jamoca Almond add 1 Cup Chopped Roasted Almonds + 1 Tablespoon Finely Ground Coffee)

Mix together, Flour, Oatmeal, Cinnamon, Salt & Baking Powder- Set aside

Cream together Butter, Sugars, Vanilla & Miso (+ Coffee if using)

Add Eggs

Mix together until fluffy & light

Reduce Speed and add Dry Ingredients Slowly

When All is Incorporated- remove bowl from Mixer & Fold in Chocolate Chips

Mix in 1 Tablespoon very very HOT water

Spoon  or scoop on to Parchment covered Cookies Sheets bake in batches 12-13 minutes until golden brown, they will puff up and then fall, these are chewy cookies.
